Being gluten free – I crave starchy things at times. However, this is really a no-win situation because breads, a bunch of crackers and cereals are off limits. Bummer.
Yet – I have learned the potato is a wonderful food for nights like last night.
I had about 5 red potatoes left over (needed to use them). So – had a thought. How about make some starchy baked potatoes.
This recipe is fantastic. I ate it as a main dish but I think it is perfect for a Thanksgiving or Christmas side dish. People will love it.
You will need: 5 red potatoes (chopped up in smaller pieces), 1 cap of olive oil, 2 tbsp. fat-free sour cream, 1 tbsp. dried chives, 1 tbsp. butter, 1 tbsp. garlic powder, 2 tbsp. Parmesan cheese and salt and pepper to taste.
First fill a pot with water – set on stove and boil the potatoes. Cut the potatoes up in chunks and sprinkle in a cap full of olive oil for seasoning.
After the potatoes are soft and cooked, drain the water from the pot and mashed up the potatoes with a big fork. Slowly add in the sour cream, butter, chives, garlic powder and Parmesan cheese. And then sprinkle on salt and pepper to taste!
Fantastico! You are done – and have a big ol’ bowl of loaded garlic potatoes. They are gluten free and should hit the spot for that starchy craving or satisfy the holiday hungry family. Yummy.
