Tex Mex Baked Potato

ImageBeing a Texas girl, everything just tastes better with salsa. Scrambled eggs a little bland? That’s alright just add some spicy salsa and now they are full of rich flavor.

I love giving regular dishes Tex Mex flair. If you like a little zest in your meals, you will love this baked potato.

It is a quick meal to make when you are tired from a long day at the office or simply have no time to cook – but want something pretty nourishing for your body.

You will need: 1 large Russert potato, ½ cup salsa, ½ avocado, 1 handful of Mexican shredded cheese, 1 tbsp. butter, 2 tbsp. low fat sour cream and salt and pepper to taste!

First of all, I cook my potatoes in the microwave. It is way faster and so much easier. And, to me, tastes just as good. No shame. So, just pop your potato in the microwave (be sure to scrub the ruddy outside before) for about 5 minutes – maybe a tad longer.

Once you think it is done (mine typically takes 7 minutes – random, I know), slice the potato down the center with a knife and press the two sides into each other – to mash up all the insides.

Dump the butter and sour cream on the potato. Let them melt then pour the cheese on top, followed by the salt, pepper, avocado slices and lastly salsa.

There you go – a bonafide Tex Mex Baked Potato! {Gluten free, naturally -Yum}.

What better way to excel in a particular hobby than to study someone who totally rocked in that area of life?

For this past year, cooking really has developed into a passion of mine. Artistic by nature, painting and writing have always been loves of mine. But, I never thought cooking would take up a permanent residence in my heart.

Cooking is creative, fun and a stress reliever. It is nice to come home, relax and absorb the rich smells of the kitchen. You really can get lost in this moving feeling. Cinnamon, rosemary, cilantro – such full scents and bold flavors!

Recently, I went to the American History Museum – and saw Julia Child’s kitchen. It was super cool. I am not typically into looking at cooking exhibits, but it was simply fantastic {probably because of my new found passion}.

Obviously, she is the face of cooking; but what made her so grand – and what can we take away from Chef Child?

Confidence and Self Worth Are Key

Ladies, this woman was 6’ 2”. She was comfortable in her own skin – and that was exemplified in her television presence. Google pictures of Julia Child. She loved life and was always dressed with a smile. Smiling was her favorite {in the words of Buddy the Elf}. Not to mention, she was always classically feminine.  I like this about her. She wore skirts and aprons. Embrace femininity.

Embrace Being a Career Woman

I bet you did not know that Julia was a research assistant in the Secret Intelligence division of The Office of Strategic Services (OSS.) I know, I was stunned – this woman created a cooking empire – all while being a professional thinker. I think woman in the kitchen get a bad rap sometimes. You can totally be a certified working girl and cook unashamed. That does not mean you advocate barefoot pregnant women in the kitchen.

Always Stay Physically Active

Julia died at age 92. She was active. She did not just bathe in buttery lard. This woman moved her keister. In fact, she was a part of a basketball team. No joke. This cooking maven played at her college. She also enjoyed tennis and golf. So, get out and do something physical. Just eating your cooking creations will get you nowhere fast. Also, ladies, don’t aspire to be rail thin either. That is just not healthy.

You Are Never Too Old To Try Something New

Mrs. Child was 37 when she enrolled in culinary school. The woman known for America’s cooking revolution was almost 40 when she stared learning about cooking. If this does not inspire you, I don’t know what will. She was 36 when she started learning a new language. This woman’s hunger for knowledge knew no age limits.

Know What It Takes – Practice & Hard Work

After cooking classes, Julia would cook and experiment in her own kitchen. She was driven to be the best. She was not afraid of a little hard work and elbow grease. She had to work hard to get ahead. She knew a pretty face will only get you so far – but a hard work ethic and mean skills will last a lifetime. She won an Emmy for heaven’s sake!

Gluten Free Avocado Alfredo Pasta

ImageTalk about quick and easy! Want to make an impressive meal for dinner guests, but you really don’t have the time to slave in the kitchen all day? Man, I think that sounds like a dream.

This Gluten Free Avocado Alfredo Pasta is your dream come true! With fresh ingredients and the creamy natural avocado texture, your guests or family will be scrapping the bowl for more. This dish is quick and easy to make.

OK, it takes a little longer than pouring a jar of marinara sauce on wet noodles. But with a couple extra minutes comes homemade, healthy heaven. Who doesn’t want that?

You will need: gluten free corn noodles, 2 small avocados, salt and pepper to taste, ¼ cup shredded Parmesan cheese, 2 tbsp. dried basil (you can use fresh too), 3 tbsp. olive oil, 3 cloves garlic.

Hopefully, you know how to make spaghetti noodles. Making gluten free ones is no different than regular. Let a cooking pot on the oven come to a boil and place the desired amount of gluten free noodles in the hot bowl. Let them cook. And strain when done.

Cool fact: my mom taught me this – you can throw a wet noodle against a wall and check to see if they are done. If the noodle sticks to the wall, you are done. If it falls to the ground, it needs more time in the pot.

You are going to make the avocado topping in the food processor. So, cut your avocados (take off the skin) and add the fleshy part to the processor. Add in the garlic, olive oil, basil, salt and pepper and Parmesan cheese. Blend this all up.

It may take a while for the avocados to fully mash up. You may need to stop the processor a few times and mix the avocado mixture around.

When the noodles are done, spoon out this mixture on top of them – and fold into the noodles just like any marinara or pesto sauce. Sprinkle more parmesan on top, if desired, and serve. Gluten Free Chicken Fingers & Honey Mustard Recipe

I hope that I am not the only gluten free person out there to admit that I am inwardly jealous when I see people diving into a chicken finger basket.

This was my favorite meal as a kid – and when I found out about my wheat allergy, it was suddenly taken from me. Major bummer.

Last night, I just wanted comfort food – some chicken fingers, if you will. But, I was faced with a daunting task – to make them gluten free and a little healthier for you than the fingers and fries soaked in grease. And, what do you know!? It can be done.

This meal is delicious. I even made my own honey mustard dipping sauce to go with my baked chicken fingers. Dive in – this is healthy, quick and will satisfy that chicken finger craving.

For the chicken fingers, you will need: 6 chicken cutlets, 2 cage free eggs, ½ cup Parmesan cheese, ½ cup almond meal, 1 tbsp. garlic powder, 1 tsp. paprika, salt and pepper to taste..

Friday Dinner. On my way to get the stuff for these awesome chicken fingers.

Crack the eggs into a bowl and whisk the mixture together. Set aside.

In a separate bowl, pour in the Parmesan, almond meal, garlic, paprika, salt and pepper. Mix these ingredients together well.

First, take a raw chicken cutlet and dip it in the egg mixture. Coat it well and then transfer it to the loose breading mixture. Make sure all these tasty ingredients cover your chicken piece. Do this same process one by one to each chicken cutlet.

Place all the coated chicken pieces onto a lined cookie tray. Preheat the oven to 375 and pop in your chicken fingers for about 15-20 minutes or until golden brown.

For the honey mustard sauce, you will need: ½ cup Dijon mustard, ¼ cup honey, 2 tbsp. light mayo, and 1 tbsp. lemon juice.

Combine the ingredients above – for a delicious dipping sauce. With this homemade meal, you will never grow jealous again of others getting that chicken finger basket at Dairy Queen. You have a healthier, gluten free version that is simply fabulous!

When I am Afraid, I Will Trust in You

ImageLife is scary. I would compare it to a roller coaster. It’s an adrenaline rush. You enjoy it, but there are times when you are mid air in a loop that seem more than frightening. Approaching the ride, blood rushes throughout your body – you feel a charge.

Yet, when you take that turn and hear the clinking of the hill that you are about to free-fall down, fear sets in – your heart races. The cart you are inside drops and flips and you are left staring at the ground below you. This moment in time, though fleeting, feels like it will never end.

Will you fall out of the cart – or live to tell the story of overcoming this ride the next day? This experience incites fear and excitement. But fear typically trumps energized senses.

It is easy to fixate on the hard times in life. Remember Jesus said, ‘I have told you these things, so that in me you may have peace. In this world you will have trouble. But take heart! I have overcome the world.’ {John 16:33} He also tells us, Do not be afraid; only believe.’ {Mark 5:6}

Trials in life make us stronger. It’s like breaking a bone. Yes, it is easy to fixate on the pain of that broken bone. It hurts – but, it is only for a time. That bone grows back thicker and stronger. That is a medical fact. It is said that the area that was broken becomes denser and is therefore stronger. Isn’t that like life? Trials, fears and failures teach us and make us grow stronger and more courageous.

Trust. It’s so hard to trust when we are afraid. One of my favorite verses as a child was Psalm 56:3. It states, When I am afraid, I will put my trust in thee.’ I had this note plastered to the walls in my bedroom. I’d look at it at night – just to reassure myself that God was there with me – and there was no reason to fear the blackness of my room when the lights were out. I also like what George MacDonald said, ‘A perfect faith would lift us absolutely above fear.’ Amen. However, we can never have a perfect faith. We can aspire toward it like we can aspire toward holiness – and this is grand!

Focusing on faith alleviates fear. I am so inspired by the story of Helen Keller. This was a woman that overcame the odds and flourished beautifully. She has motivated and still encourages so many to this day. She had faith – and truly believed God when he said ‘Do not be afraid.’

I am sure in her darkest moments she felt a deep seeded terror. This woman lived in darkness physically – but, hallelujah carried within her the light of Christ! She was recorded as saying, ‘It’s wonderful to climb the liquid mountains of the sky. Behind me and before me is God and I have no fears.’ Wow, what words! Trust always, even if you are in the air of a roller coaster loop. God has your best interest at heart. He loves you with an everlasting love. When you are afraid – trust. When you trust God – there is no room for fear in your life.

From My Heart To The Heavens, Jesus Be The Center

Image“You were made by God and for God – and until you understand that life will never make sense.” These words said by Rick Warren struck an artery in my heart this afternoon. I felt a rush through my body as if the blood in my veins was pumping just a little bit more freely.

Made by God. As Christians, we know this. It is something taught in Sunday school. Genesis explains that God breathed life in Adam and Eve was formed from man’s side. But, if this truth really transcends your mind – and reaches your soul – it is absolutely exquisite that you carry within in you the breath of God – the breath of Heaven – as a famous song points out. He inhaled into you air from his wondrous, everlasting lungs. This is not something to shrug off as typical religious knowledge. The breath of God is in the fiber of your being. It makes up who you are. You carry within you – air from the Living God.

Made for God. What was I made for – what is my gift, my calling? Its simple – to be a lighthouse for Christ. You are his vessel. Like a mason jar illuminated on a front porch step, you are the light in the night of this dark world. Everything else is really minor. You are God’s billboard. How you live your life, what you say and do should reflect God. You are his face on earth. Of course, God wants you to prosper and make the most of your life here on earth. He wants you to pursue your passions and dreams; but, with those dreams is also a yearning and need to reflect Christ. It is shallow without ever filling that innate soul yearning. We are simply the reflection of our light source – the Son of God.

Life Makes Sense. Pastor Warren is right. Without understanding these concepts {that are way more complex then they appear} we will never really understand life. Life is simply empty without Christ as the center. I love the song that boldly proclaims, ‘From my heart to the Heavens, Jesus be the center. It’s all about You. Yes it’s all about You.’ As humans, we tend to make life about ourselves – our plans, our future, that promotion or raise at work, that desire for a family or children, that house that we’ve always dreamed about – our wants are endless. And we will always be empty if we reach for our desires – for they are not his! However good they are – Jesus will always want more for you! Yet, with Jesus as the center of it all, don’t those personal needs dissipate just a little bit? We are spiritual beings and our soul years for a spiritual connection. We can never be good without God. Knowing that we were made by God and for God puts life in perspective.

I will loudly cry out, Jesus be the center of my life!

Reading is Real. Classic Book Inspired Coffee Mugs Under $20

Books warm the soul. I love the C.S. Lewis quote, ‘Literature adds to reality, it does not simply describe it. It enriches the necessary competencies that daily life requires and provides; and in this respect, it irrigates the deserts that our lives have already become.’

The art of reading has simply died, and this is sad. I read a blog post yesterday titled, “18 Things Everyone Should Start Making Time For Again” and making time for real books was #6 on the list.

I love what the author says, ‘Actual hard copy books that you can scribble notes in and mark off sections of and smell ink through and hear the sound of turning pages and bending spines while you read.’

I do not want to knock the kindle or the iPad – but doesn’t it feel different to highlight and write things to the side of those tangible pages? Flipping through old books is one of my favorite things to do. It is neat and inspiring to read old notes to yourself or once illuminated thoughts.

Thinking back, I can remember crying through ‘Wuthering Heights’ and seeing my salty tears stain the pages – even to the point of leaving wet wrinkle marks. I cherish that book to this day. My Bible is marked with multicolored highlighters, pages are earmarked and notations abound but I would not have it any other way. This makes life real to me – not just a virtual world.

I think a challenge to me and to you should be to take time to read. Pull out a highlighter and mark that book up. Think on a special phrase or Bible verse. Write in a notepad or to the side of the page what it means to you. You will look back and appreciate the time you carved out to do this.

Be human. Don’t live in a virtual world. Engulf the classics. Sit in a reading chair with a cup of coffee or tea (maybe one that reminds you of your favorite childhood book) and drink in the words. Words impact people and people impact the world. Be a World Changer!

Tuna Salad Veggie Rolls

ImageSo, I have been listening to Dave Ramsey’s Total Money Makeover audio book. You can thank my sweet boyfriend {who has told me almost every weekend to listen to it} for that. But, to my surprise, I am actually enjoying listening to it. Dave Ramsey for president! Anyone?

Really – if you want to plan for your future, you may want to check it out. I like the audio book. But, you can read it too if you are book lover.

One thing I cannot get past is spending my precious lunch money on the work cafeteria. I mean, can I really justify $6 for a salad when I can make my own at home for a dime?

I can buy a six pack of romaine lettuce at Costco and eat salads for more than a week for next to nothing. So, that is my new challenge – I am taking my homemade lunch to work.

Check out these awesome Tuna Salad Veggie Rolls that I made last night (pictured in the post.) And, I used the leftovers for a salad at work today. Score! Gluten free, healthy and cheap. This tuna salad was quick and easy to make, and I used the lettuce leaves as bread!

You will need: 1 can of light tuna in water, 2 cage free hardboiled eggs, 2 tbsp. light mayo and one handful of shredded cheese.

Simply drain the tuna and dump it in a bowl. Peel hardboiled eggs and use an egg cutter to dice them up in pieces. Add to tuna mixture. Scoop out the mayo and add it to the bowl. Stir this up and sprinkle in the cheese last.

Pluck off three big leaves of romaine lettuce and fill them with tuna salad. Your dinner is served.

Oh, I also sprinkled some olive oil dressing on top of the leaves. I used the left over oil from Trader Joe’s Marinated Mozzarella Cheese. This is another way to save a buck – just added the oil to a little glass canister. Yum.

Gluten Free Chicken Tortilla Soup

ImageOn cold nights the thing that warms me up the fastest is a big bowl of soup. Being from Texas, anything spicy is near and dear to my heart. And, us Texan women, are taught from birth basically, the joys of whipping up some zesty meals.

Last night, I was in the mood for Chicken Tortilla Soup. My mom used to make this dish a lot in the winter. It simply just warms your soul and senses. The rich avocado and toasty tortilla chips add that extra crunch and savory pop.

You will need: 3 chicken breasts (chopped),  1 quart gluten free chicken broth, ½ onion, 3 cloves garlic, olive oil, 1 can hominy, 1 avocado, 2 tbsp. cumin, 1 tbsp. chili powder, ½ tsp. red pepper, tortilla chips, 1 handful shredded cheese, 1 tbsp. low fat sour cream, salt and pepper taste.

First, bake your chicken in the oven for about 10-15 minutes at 375. (I used pieces of precooked rotisserie chicken for my soup!) But, you can totally bake your own chicken. I was simply being frugal by using what I had in my fridge. When the chicken is done – chop it up in small pieces and set aside in a smaller bowl.

In a frying pan, pour in a splash of olive oil – then your chopped onion and garlic. Sauté these for a bit until lightly brown.

In a separate pan on the stove top (set on high), pour in your chicken broth. Then add in your little garlic onion sauté mix to the pot. Add in the spices – cumin, chili powder and red pepper. Stir. Then add in the hominy. Let this cook for about 20 minutes.

Add in the sour cream and cheese last and add salt and pepper to taste. Pour the soup in bowls – and add crushed up chips to the top if the soup. For a garnish, cut up an avocado and sprinkle pieces on top of the bowl along with some shredded cheese.

You are ready for a cozy, yummy night – Texas style!
