So, I felt like burgers last night. However, after seeing the documentary, Vegucated, was not really in the mood for a juicy cow patty (watch this documentary and you will know what I mean!). But you know what – there are some good alternatives to the traditional hamburger. Black Bean Burger anyone?
I ran across a great recipe on Fantastic Food. It made my mouth water – so I had to give it a try. I changed it up a tad so that it is a gluten free dish! You will need a food processor for this – FYI. Although, you might be able to mash up the black beans and dice up the spinach (it will just turn out chunkier than my burgers).
It looks complex – but it’s really not, trust me! This is a simple recipe (put all these together in a food processor): 1 can black beans, 1 cup spinach, 2 tbsp. gluten free baking flour, 1 small clove garlic, 1 lid full olive oil, 1 tbsp. cumin, ¼ tbsp. chili powder and a fresh squeeze of lemon juice! Blend these up! It will create a paste.
Turn on the stove-top burner – and spray the pan with cooking spray. I just scooped out the mixture with a big spoon and place a spoonful one by one in the frying pan. One at a time, I grilled black bean patties. Then added my favorite condiments. Yum!
